I recontracted a couple of months ago, during the rundown of what I was getting there was no mention of Sky HD. I asked about it and was told I didn't need it anymore as it was part of the package. Now today I've realised I've lost all the non terrestrial HD channels and even recordings from HD channels won't play as I don't have the correct subscription. Has something gone wrong or was I misinformed?
I've done a reset which didn't do anything, and checked if I can download in SD which I can.

The base Signature package doesn't include HD. You still need the HD add-on.

I suspect that's an advisor confusing the new online products with the satellite ones: Glass and Stream have HD included, Q and Sky+ do not.
