We were considering moving to Virgin Media as they were offering us a great deal and said they would pay any Sky cancellation fees. We discovered they would only pay upto £100 and as we have 11 months left of 18 month contract, the fees would be a lot more than this, so we have cancelled Virgin and want to remain with Sky. Virgin said they would organise the cancellation and have all our Sky details, so need to know how to make sure our Sky package isn't cancelled.

You can call on 150 from a Sky Talk Line or Sky Mobile.
If you haven't got a current Sky Mobile or Sky Talk this link should help:
https://www.sky.com/help/home Scroll down and click on ‘Need more help’ and it provides a 0333 number. If you are in the ROI on the same link change the flag in the very bottom corner to the ROI flag to obtain an 0818 number.

What do you mean by 'all our Sky details'? VM cannot cancel your contracts.

Indeed - We have certainly seen a number of posts on this forum in recent weeks where Sky have processed the cancelling of the cancellation which has kept TV services on but openreach have still proceeded with cutting the phone and broadband services.
