No need to get stressed, just leave things be and see what happens when you 31 days notice is up.
Should you need to contact Sky again you could try social media instead of calling as there are links to Sky's sites at the botom of the page. What you could do in the meantime is to make a note of the date and time you called them so that you have covered and if needs be you can prove that you did call them to give notice to cancel.
