The way to do this depending on if you are a Sky Q or Sky Glass or Stream customer as you can see via this link, there is also a messaging service as you can see via the Contact Us button under Downgrade here:

You might need to do this tomorrow though and 31 days notice is required to cancel during which you will be billed as usual for it.
