I have 2 bill amounts on sky

Sky signature 10 days @ £10

Sky signature 21 days @ £17.61

Multiscreen 10days @ £4.84

Multiscreen 21 days @ £6.77

can anyone explain why they are different days and different amounts for the same thing ?

31 days (1 month) at different rates.

Sky's billing system is daily pro-rata - so you have 10 days at one rate and 21 days at a different rate.

Presumably because of the price increase or a change in your discounts.
