Can’t use Discovery plus

can't log in to discovery plus as I get the error "sorry access to discovery+ is available only within the country where you created your account" due to using a VPN. Discovery have told me I need a new account, but it's linked to my sky account. How do I unlink sky and discovery so I can link a new discovery account to sky

I suspect you need to ask discovery to unlink the account from your Sky account so that you can then go through the linking process again.
