Cancel current subscription and start new one

My sky bill has gone up to £180 how do i Cancel current subscription and start new one with just basic sky TV

If you mean to incorporate new customer discounts you can't. You have to be away from Sky for 18 months before being classed as a new customer.

You can do it under a family members name residing at your address, Wife, Husband, etc

You need to contact Sky and give them 31 days notice to cancel it, so you can either call or use the messaging service to do this.
