My email as been hacked and deleted my inbox back to 2019

What makes you say you account has been hacked as it might not have been as emails going missing with Yahoo does happen frequently so if these have gone missing over the last few days then give this a try to see if they can be restored:

I opened a email from McAfee which wasn't from them .

Simply  opening an email is very unlikely to result in your device being hacked. More likely you're victim to Yahoo Mail's unfortunate habit of unilaterally deleting emails, as @caesarome posted.

Surely it can't be coincidence that as soon as I opened the email everything disappeared

Just opening a fake email isn't going to do any harm as @Mark39 , not unless you clicked on some links in it and downloaded any software and even that is unlikely to wipe out these emails.
