Why has coverage been reduced to just one game this week?  3 games were scheduled to be shown but now only one is appearing in the guide

Good question! I wonder if the TV guide is messed up.

I was sure I had set to record the opening games from vegas at the weekend. Tuned in the next morning and they weren't there. I also see that those games aren't available on catch up. Not sure what is going on with Skys coverage! Their website still says that the 3 games are still being shown.

You could email viewer relations at viewerR@sky.uk as they may have more information.

I got in touch with sky regarding this, it's because they can only show 3 games a week and as they showed the Las Vegas double header that meant they could only show one this week. They weren't informed until late hence the programming confusion. 
Should be back to 3 next week.
