As sky are increasing prices for me from March and then tell me it will rise by another £4 in April (plus what they charge in April 26) I am looking to save.
Is there an option to keep the box for freeview and pay monthly to record and watch recordings from these channels ?

Is there not a cheaper subscription that allows recordings/playback but not access to the full sky channel list ?

That's 'Television Essentials / TV Essentials' (not 'Essential TV') and is generally provided on a Sky Q box these days because this gives Sky the opportunity to upsell to a current subscription channel and app bundle.
