Perfect yeah got the 

HISENSE PRO 4K Ultra HD HDR QLED  so hopefully be able to tell difference

Once in UHD mode- does it make a difference if I watch a normal HD channel with UHD still on

UHD isn't really a mode, it's just the resolution of the programme, movie or channel you're watching.

If you set your Stream puck to output 2160P in the video settings then it will automatically upscale all the HD channels and app sources to fill your 4K TV's screen. If you keep the Stream puck's output at 1080i (which is the native resolution of most content) then your TV will upscale it to fill the screen. Sometimes this can look marginally better but it depends on your TV. 

If you watch any native UHD content then this will automatically be output in UHD so will be higher resolution and sharper than the HD equivalent, so you're better off keeping the puck's video output as 2160P. 

Be aware that the only live UHD content on Sky are the Sky Sports UHD channels. All other UHD content is available on demand once you have the UHD/Atmos pack as part of your subscription.

Perfect so you suggest to just leave the sky puck in UHD move when pressing the 3 dots rather than changing it backwards and forwards

Yup. You set your resolution output from the settings menu. The UHD sports channels are on the EPG with different channel numbers. If you're watching a HD sports channel and there is a HD feed, you'll get an on-screen prompt to watch in UHD or Live Sync.

 

There aren't any live channels for UHD movies or entertainment though so these are all played back on demand. Even if you something from Sky Max etc, it'll pull the UHD version if it's available but the program description will tell you if it's HD, UHD and if it has Atmos audio...

@GeorgeP yup and it'll upscale the HD channels as well so they'll look better. I'd stick ad skipping on your order as well as it allows you to jump through adverts when watching on demand, it works on itvx etc but doesn't work on Netflix, Prime, Paramount+ & Discovery+ if you're on standard plans as they're standalone subscriptions. You can upgrade Netflix and Paramount+ to premium if you wish and that'll get rid of the adverts and give UHD and Atmos audio...
