I have a question for anyone currently watching sports on Stream. If you forget to add an event to your playlist and then want to watch it later that day (after the event has ended) or the following day, are you still able to watch a full replay of the original broadcast?

Yes, have a look in Home>Sports>
Select the Sports you want and scroll down to the Catch up rail for that selected Sport.
Football and F1 will be the most populated for recent matches or events.
Some sports like Tennis, will only have a selection of available matches, mostly the Semi and quarter finals and GB participation.
For Sky sports, get in the habit of adding the live Sports anytime during the season and it will series link all the matches for an event and will cloud record them. After a few weeks or so, the cloud recording will swap over to an On demand full replay.
Be aware that some of the Sky Sports+ live matches will not cloud recorded and will not offer any On demand.
Sky Stream with two pucks (former Sky Q and Sky+ customer).
Sky Ultrafast + using Sky SR203 hub. Sky Mobile unlimited data. Sky Protect smart tech kit tester.

Also worth being aware that there can be a delay before the on-demand replay of a sporting event is made available ( sometimes it can be as long as about 24 hours).
For TNT Sports on-demand content open the Discovery + app.

Thanks. I read your account of switching from Q to Stream. I'm thinking of making the move from Sky+ HD. Anything you've missed? I see you are a big sports fan, including football. Have you found watching football as easy as when you had Q?

Yes, as easy as it was with Sky Q. No regrets moving to Sky Stream at all, now after 18 months +
I do tend to watch as much Sky Sports live as a I can.
Do on a busy a sports day, grab a tablet/smartphone also and mix and match the Sky sports watching on those along with Sky Go, Sky Sports app and Sky Stream.
The PQ on Sky Stream is an uplift on Sky Stream, if you care for the extra quality picture and sound experience.
For me the cloud recording has been excellent for mostly the football and F1 and for what I've mentioned above has worked very well without issue.
Be honest, even adding for cloud recording and On demand to the playlist, I tend to and make most time to watch sport live, so it's not often I'd be watching any cloud recordings or On demand more than a week or so after an event, even though often you still can.
The Sky Sports + selection on Sky Stream has gone through a recent change and gone has the TV app for the Sky Sports + content and its now all integrated into the menus with its own rails and other live and upcoming rails, making it all very easy to find and play content.
The only major consideration for any use of Sky Stream is having a good home local network based on a good broadband speed, probably a fibre one.
You really need to look at why you maybe record everything in the 'old way', do you really watch all the recordings and as above, would most cloud recording or On demand full replays or even some highlights cover most of it.
With the likes of Sky Sports + extra content not available for recording anyway (unless it's on the Sky Sports + linear channel) that's a future consideration to bear in mind for future viewing and the way it's all moving.
We have to accept that rights and methods are changing fast, so some sports content will appear on the likes of Sky Sports + and apps like Discovery+ (TNT Sports) and the like. But, Sky Stream does make that all a seemless find and play experience across those differeing methods.

@lettice Thanks for such a detailed reply. Very helpful. I tend to time shift the football by about 20 minutes so I can skip the half time analysis, so guess I will use the "watch from start" on Stream then fast forward to the start of the game, then fast forward another 15 minutes at half time so I am then almost watching live but maybe a minute or two behind.

Ok, yes the watch from start works well.
Do the same sometimes.
Even though never had any trouble with it, the watch from start has had quite a few updates recently, so works as it should, for some of the little glitches that were seen by some customers and for some content.

@lettice Thanks again. So far, all my streaming has been done using a first gen Fire TV Cube. I use a powerline to connect it via ethernet to my Sky router upstairs, and it works well with no buffering. I get around 70-75Mb/s with Sky Superfast, which I think should be more than enough to stream UHD content.
