I'll try to switch to different hdmi port. It's current on the TV hdmi one port. Using supplied cable.

I just chose The Dig via the Stream Netflix app and mine is only showing in HD with no other option. I then selected Netflix from my LGTV app and it immediately came up as 4K. My Stream settings are UHD and watch lots of programs in UHD,
In the recent past I have watched programs on Netflix via Stream and have been surprised that they were not in 4K/UHD but never thought to check the direct app, but viewing via the direct app somehow negates the whole purpose of watching everything on Stream!

This must be to do with the HDMI handshake between your puck and your TV.
If the Netflix app isn't detecting that the puck is connected to a TV capable of receiving 4K HDR streams then it will default to HD.
Are you getting UHD with HDR from other app sources on your puck? Do you get UHD HLG content on iPlayer for example?
If not, check that the HDMI port you have the puck connected to on your TV has HDR enabled.
Are the UHD programmes you have been watching actually the UHD versions? What is the source of them? Sky on demand or other apps?

I get this at times with Netflix via the Stream device. When it's happened, I change the resolution to 1080, save and then back to 2160. Netflix then behaves and shows correctly.

First of all thank you to @BenJoBanjo for your comprehensive reply. However before I could reply I saw @Skull+Treaty reply and did as he suggested and it worked. I am interested to now see if this is a permanent fix or not.

I am getting UHD on all other formats. Sky sports, Cinema, entertainment channels. BBC iPlayer via Sky Stream. The only source that doesn't come through as 4K/UHD is Netflix, but only when through Sky. No issue when accessing my tv's Netflix app

I'm having the same problem but only on one of my Stream boxes. The second stream box is fine as is my Glass Tv.
On the problematic stream box all other UHD services are working fine. I've tried powering down and changing the resolution but it's not fixing it
