I am not fully sure if you are just quoting a few examples of channels that you watch or whether you don't realise the channels included.
SKY Signature is the base entertainment package that is mandatory to be able to use SKY Q and add on any other 'add on' package ( an exception is SKY Essential which is basically Freesat using SKY Q)
This includes the bulk of the entertainment, news & documentary channels, as well as access to the Free to AIr Channels such as BBC, ITV, Ch 4, Channel 5
The HD add on enables the you to watch the HD versions of the channels in Signature line up - alsthough you can watch some of the FTA channels in HD without it So removing it will prevent you from watching most but not all - HD versions
BTW Some channels such as W are FTA in SD but need Signature & the HD add on to watch the HD version
Ultimate TV add on is indeed Netflix so if you remove it you remove Netflix
BTW when you pay SKY for Netflix the SKY HD add on mentioned above increased the Netflix level to be able to watch 2 screens at once
BTW if you have signature for £10.50 that is a very good deal
