Looking at my bills it seems that all my Sky+ based subsrciptions, including multiroom, end on 3rd of November... however, the engineer visit for Sky Q is not until the 14th of November.
Does this mean I will lose access to multiroom and the other terminated legacy subscriptions on the 3rd and I won't regain access till the 14th after Q is installed?

No, never even considered it might be an issue.
I have had Sky+ for many years now and had several services/packages that are no longer available but were marked legacy.
It was explained that by doing the upgrade I would need to move onto the newer packages/re-contract for some which I understand and don't have a problem with, but I was just looking at the "My Bills" area and noticed that several items from my current Sky+ subscription (including multiroom) appear to be paid up to 3rd November and then end.
Having looked in the billing section again, maybe the information is just confusing as it shows all my new subscriptions starting on 10th October which is when I placed the order.
This is the bit that has me concerned though:

The following subscriptions have been cancelled, access to content will continue until your subscription period ends:
I won't be popular if the Sky+ boxes in the other rooms stop working on the 3rd!!

Did you ever get an answer to this question. I ask because I am currently in exactly the same boat. I am being shown that multiroom (legacy) will end but its not showing that a new multiroom subscription will start with the new Sky Q subscription.

On Q that's Multiscreen: it's a different add-on.

Did you explicitly ask for Multiscreen? Sky won't add it automatically just because you had Multiroom on Sky+HD. Similarly, you need to order a Sky Q Mini Box as this also doesn't automatically come with Multiscreen.

I repeatedly asked the Sky rep on the phone to keep multi screen and add a mini box but all he kept saying was "No Change" and "it's £10 cheaper than what you're paying now". The Indian call centre is a nightmare to deal with nowadays and I really can't be **bleep** to call them again. My plan is, to ask the installer on installation date if I find that I no longer have multiscreen and add it on once it's up and running.
