Sky Q box stopped working so I boxed it up with the leads and touch remote as instructed. Now I'm unboxing the replacement and the remote they have provided is not a touch remote. I feel like I have been scammed and should have kept my original Bluetooth touch remote!

Sorry @robn900482r that you have found this out the hard way - as @Daniel0210 says the Touch remotes have not been produced or issued for many years.
Too late now, I am afraid, you could have just sent the new remote back instead - if you really want a touch remote you might be able to find a 2nd hand one on ebay
(Personally I prefer the newer remotes)

The v1 touch remote (smooth surface) was only built for the original 'Q Silver' 2TB box in 2016. The v2 (button disc) was shipped with the v2 (HDR) 2TB box in 2017-18. Since the release of the 1TB UHD/HDR in late 2019 the default remote has been the front Voice button unit (which is Bluetooth because that's how voice control works)

No consistency from Sky here at all.
The help pages indicate that you can order a new touch remote. I followed the online route first only to receive what I believed was a mini box remote.
So I called Sky. No indication from the technician that touch remotes weren't available and I was assured a touch remote would be sent. They sent another remote which was again what I believed was a mini box remote.
Only on a second call to Sky did the technician actually state that the touch remotes were no longer available and that now only "voice" versions are available.
Super frustrating and a step backwards for the remote in my opinion as the capability of the touch is/was far better than the button prodding of the (now standard) remote I now have.

TBH I think part of the problem is that the Touch remotes are so old that most advisers haven't a clue what one is/was
FYI The only remote that was issued only with minis in the very early days were the Infrared only remotes which again SKY have not issued for many years - all remotes for many years (other than the accessibility) are Bluetooth/Voice remotes & unfortunately for some users are not Touch remotes
All remotes work with both main & minis
You might be able to get a 2nd hand Touch remote on Ebay

As @nigea99 indicates (and the earlier posts refer to) the 'touch' remote is an antique from eight years ago, and most current Sky support staff will never have seen one.
If you find a reference to that particular hardware on the Sky website, we can ask them to amend it.
