I have the older version sky Q box which I’ve had for 6 years. It doesn't have the remote that you can talk into. Do you know if I can I upgrade/change it over to the newer version sky Q box? There is no option to do this online...

Afraid you need to speak directly to Sky to upgrade your Q box.

You could upgrade the box but there will be a cost.
If you just want voice control you don't need to upgrade the box as all SKY Q boxes work with voice control.
If however you want a UHD/HDR box you are likely to need to pay to upgrade
if your remote doesn't have voice control then you could contact SKY to see if they will send you a voice remote for free - although they might charge - alternatively you can buy one from many sources.
BTW If you want to check which box then look in :
Home - Settings - System Info - Hardware Version
If it is 32Cxxx then you have an older 1TB non-UHD Box
If it is 32B0xxx then you have a (V1) UHD but non HDR 2TB Box
If it is 32B1xxx then you have a (V2) UHD HDR 2TB Box (which has a separate Power supply)
If it is 32B2xxx then you have a (V3) UHD HDR 1TB or 2TB Box

BTW SKy Minis all show as 32Dxxx
