ITVX asks me to verify an email after I registered but it does not send me an email to verify my registration. I have tried on more than 20 occasions and have checked all inboxes on the email and spam and junk folders but still not received anything. If this is not sorted then my contract with Sky has expired so I will switch provider. I'd prefer to speak to someone rather than go through this laborious process!

This is a customer helps customer based forum. I’m afraid you aren’t addressing Sky Customer Services on here. Have you tried calling Sky? ITV?

Out of interest, I just tried registering and received the email immediately.

Assuming you've entered it correctly then that's a question for ITV. Sky only host the app.
