You should be able to watch recordings immediately after they start recording.

If you mean live Sports events to become available to Download from On Demand then it's very rarely that they do. Other than F1 it's usually a highlights download at best.

If it's live recordings you have set yourself of live events of Sports channels on any channel, they will be available to play as soon as the recording starts.

If you mean waiting for any On demand content to be made available of previous live events, it will depend on the Sports rights that Sky or other channels have on when and if they can be made available and sometimes, not the full live event, just selected highlights.

Might be worth flagging which sporting events you are asking about?
