eSIM option greyed out on activation page

The option to activate an eSIM is greyed out on the activation page and I only have the option to activate the physical SIM. Why is this?

You could activate the physical sim and then convert it:

I don't have the physical sim yet. I was hoping I would be able to activate the eSIM before I enter into the next month with my current provider but it seems like I'll just have to wait
