I am curious as to what happens to my Apple Watch payment plan if I upgrade my iPhone. I took it out on a 36 month contract, and I am now 29 months into that contract so eligible for a swap update. However, the Apple Watch plan is running concurrently with my current phone one. Will it continue as normal with a new phone contract if I upgrade?

I would have thought so as it should be seen as a seperate device so you will just continue with the contract on this until you have paid it off.
