So I want to pay off my phone and start a new phone contract with sky. However there are sim deals with sky that I would like to take out when I start a new contract. So what I am asking is that is it possible to keep my rolled over data, but start a new sim and a new contract. And pay off my old phone. What will happen to my old sim, can I keep my number?

You can do this yes as your rolled over data stays on your account and would only be lost completely should you cancel and leave Sky Mobile.
If you pay off your old phone it would be long to you so you can't upgrade or swap it but you can (credit check permitting) take out a new phone contract.
The data sim offers you see apply to a new sim only so if you were to do this the only way to get your number onto the new would be to transfer it to a PAYG network them back to the new sim or you could try calling Sky to see if they will apply the data deal to the sim you have already got.
