Hi, I have purchased 2 Iphone 16 Pro max over the phone, paid the upfornt cost singed the contract and agreement and then my received email saying my order has been canceled

Any upfront payment you’ve made should be refunded after about 14 days. If it takes longer than that you’ll need to call Sky to chase it up.
