So I've split with my boyfriend and I pay his phone bill he won't give me the phone back so I need to cancel his sim

You can call on 150 from a Sky Talk Line or Sky Mobile.
If still within the 12 month minimum term then I would ortder a replacement sim and activate it, this will disable the old sim
