Sim deals and swapping from one sim to another both sky

I have 3 sims with sky currently. Im buying a new iphone from apple as its cheaper but can i change my sky sim and take out a sim new deal. tThen reduce the other two sims tominimum as im banking data and they dont need to be as high.
