SIM card and phone number
I accidentally transferred my phone number from O2 to my iPad SIM card with sky instead of my phones SIM card, I would like to change this

The easiest way is to change the sim card from your iPad to your phone as there is no direct way you can transfer the number between two Sky sims without having to transfer it to a PAUG sim first then back to the correct Sky sim.

The ipad sim has a significantly reduced data package though so it would be a problem still

Unless Sky are prepared to swap the dataplans then the only option is as described above - you'll have to transfer it out of the network and then back to the correct SIM.
(Or if you have enough data in your piggybank then you can transfer it to the lower dataplan regularly)

Is there any way of talking to an actual advisor instead of a pre re ordered robot I'm really struggling with this and they are not helping one bit as the replies I can give are restricted

Not today there isn't any the lines are closed, they will open again tomorrow.

One last question, see if I bought an iPad that comes with a complimentary sim card, I don't pay any money for the sim.. do I actually need it or can I cancel it as I don't take my iPad out the house or text/call on it

All iPad's sold by Sky are cellular.
They provide a SIM and dataplan but you don't have to use it. Even if the SIM is 'free' (And it won't be forever) I don't believe you can cancel it within the minimum term of 12 months once outside the cooling of period.
If it's only ever used on WiFi then you don't need a SIM/dataplan. (Or you can tether to your phone if absolutely needed)
