Yesterday I was able to add some of my unused data to get some money off the air pods, but today when I've gone on to order it's not giving me the option.

It sounds like your quoting from an official source, can you advise where this info is from? I've also noticed a changed in piggyback redemption today but it doesn't match what you've said either. An option is still there but the value has significantly decreased.

Ah, I see. It is odd there has been no official word on this change in terms prior to this but they have opted to advise select community members.

Change in what terms? afaik there are no terms, just what Sky decide to offer at the time of purchase.

Perhaps terms isn't the right word but I would have thought Sky should want to be up front about a fairly significant change in the exchange rate value and options offered for a perk they admittedly offer as a bonus but like to remind people about frequently.
