I've got the Apple Watch SE on order, but I'd like to change it for the Apple Watch series 9 as it's got some better features, how can I do this, without having to call up?

You will have to call as it is the only way to get the order you placed cancelled as there is no option to do this online. 150 is the number to use from a mobile that has a Sky sim in it. Placing a new order will see you credit checked again.
