If your phone can take an esim then you can either wait until your physical sim arrives and convert that to an esim or order yourself one now from here:
https://www.sky.com/shop/mobile/plans
Make sure you select it under "Choose sim type" and if you do this when the physical arrives do not activate it so it is cancelled otherwise you will be paying for both the sim and esim.
