Ordered a new phone (iPhone 15 Pro) from Sky. Phone was delivered yesterday, set it up using WiFi and restored all my apps and data.
Went out yesterday evening and found that mobile data is not working. I have an active Sky Mobile SIM that I have installed in the new phone, the phone shows a full 4G signal, but I have no internet connection so nothing apart from calls and SMS works when I am not connected to WiFi.
When I got home I tried to update the APN settings via the MySky app, but this just resulted in a text message saying that APN settings would be sent to my phone, followed by another message saying that there was a Temporary error and that I should try again later. I tried again this morning but got the same result.

That advice doesn't apply in this case as I was not changing providers, simply upgrading to a new phone on an existing Sky subscription.
Anyway, I got the the bottom of the issue. The Apple data transfer process had copied all of my personal VPN settings to be new phone, but I need to launch the SurfShark app in order to authenticate the connection. This wasn't an issue at home as my home WiFi is a trusted network, but whenever I left the house and the phone started using 4G/5G the VPN was automatically firing up, but failing to establish a secure connection because no authentication details had been supplied. Once I launched the SurfShark app and entered my username and password, everything was fine.

Internet APN Settings:
Name: Sky Mobile Internet
APN: mobile.sky

Just incase the author has not yet figured this out and for future readers:
Go to settings, then mobile service. Under 'SIMs', you may have two options. Make sure the only one activated is your skymobile data plan. You may have your old mobile network data activated.
