My sim has been removed and canceled
So my sim has been canceled and removed by sky for missing payments, that's after I told them and they said a note is on my account and I'm fine to make the full payment this morning coming.. now my number has gone and I cannot find out how I get it back! It's linked to all my accounts and it's only £25 that I owe! How can you send £25 to a debt collectors after been told I'll pay it..

I'm afraid notes on your account won't stop an automatic cancellation.
I believe Sky can recover numbers recently cancelled but you'll need to call (And they obviously won't do this with outstanding payments).
(We're other customers here and not Sky CS)

The Sky Community is a customer led discussion forum where Sky customers are available to help other customers. You are NOT contacting Sky Customer Services by posting here.
If you’re in arrears for 56+ days Sky can fully terminate your subscription. These restrictions are automatic and we've been told agents cannot override this process even if you’re told otherwise.

How many payments did you miss, so how far behind are you wuth paying your bills as usually Sky will only cancel once 56 days has past so is the case here ?
