You can order a iphone via the Sky website and if you are not in a contract with EE you can transfer your number to Sky:

You would need to order a Sky sim with a data plan.
Activate the Sky sim when it arrives but do not put it in your iphone.
Request a pac code from EE
Give the pac code to Sky
The number will be transfered on the next working day so your EE sim would stop working and when it does you can insert your Sky sim into the phone.
