How do I change the number on phone section to the number I transferred over

New contract with sky, didn't want new number so transferred my EE number over but I can't face time on new I phone as it still states the sky mobile number and not my EE and also causes calls to come up as numbers and not my contacts

If Sky has told you that your number has now transferred over from the EE sim have you checked that your iphone is now showing the correct number:

 

If this is an iphone refresh the network settings so go Settings > General > Transfer or Reset [Device] > Reset > Reset Network Settings. If you're using iOS or iPadOS 14 or earlier, tap Settings > General > Reset > Reset Network Settings. Then go to Settings - Phone - My Number and change it if it is wrong, then reboot the phone. You will need to set up your Wifi connection again.
