If you have had your current number for more than 12 months just call Sky on the 150 number and get them to cancel your sim. You then request a new sim which will come with a new (but almost certainly recycled) number.
Otherwise Sky won't change it unless you're receiving threats etc which have been reported to the police and you have a police reference number.
