I would like to change my current sky mobile number due to harassment. Even though this person is blocked they are still able to contact me to leave voicemails and also call me from withheld and different numbers. It is over 2 years I have had this sim/number, I would like to stay on the current plan but only change my number. How do I do this please? When speaking with a sky customer support/sales they advised I will have to go through a whole credit check just to change my number. This doesn't make any sense.

It will come with a new (but almost certainly recycled) number. When its activated call Sky on 150 to cancel the old number.
Otherwise Sky won't change it unless the calls/texts are threatening and you've reported the incidents to the police.

There's no option to order a new sim, only a replacement sim. The only option would be to order a sim only plan. Is that what you mean?
