I'm trying to exchange spare data for AirPods and either app or online won't let me

If you mean via the Piggybank Rewards, we have been informed that the Piggybank Rewards section is being rebuilt and that it will hopefully be back up and running sometime this month or next. If you call Sky (free by dialling 150) they should be able to sort out any rewards transactions for you.
