Can’t order Apple Watch with s/m strap

How do I order an Apple Watch with a small/medium strap? It says you can get this size strap in the description, but in the order journey it defaults to medium/large and there’s no option to change it. Thanks

I'm seeing the watches with different size straps as separate Sky products.

Typically Sky confuses things by copying text from Apple on individual pages which offers options that aren't there.
