I have an Apple watch (SE) which I own outright but I want to see if I can add it to my Sky mobile account. Does anyone know if this is possible?

Nope, not an option.

Why would you want to 'add' it to your account?

My watch was added to my Vodafone account previously but then I swapped to Sky and the watch doesn't work independently

Sky do not currently support eSIMs for Apple Watches.

Devices showing on your account will also only be those purchased from Sky. (And only disappear once returned)
