This may not apply in all cases, but I managed to resolve this issue on my M1 MacBook Pro after having a very similar problem. In my case, the app would launch and get as far as the login screen, when it would crash every time just as I was about to enter my credentials.
Each time the crash report would show that it was throwing an exception due to the Canon EOS webcam utility driver I had installed for my DSLR. Why specifically this I don't know, but the clue was that the driver was clearly an x86 Intel binary, not an Apple Silicon one. Remembering the previous conversations about Rosetta and Sky Go still being old Intel Mac code that was not rewritten and recompiled for Apple Silicon, I wondered if this was specifically causing a conflict via Rosetta.
So I uninstalled the Canon software — which fortunately I no longer need anyway — and, lo and behold, Sky Go was up and running. No problems since. So that might be a place to start looking: obviously very few other people will have conflicts specifically with Canon x86 binaries but it may be that Sky Go plays poorly with other Intel binaries through Rosetta.
Looking at the crash report should give you an idea of what is causing the conflict. I find TinkerTool a useful way of accessing these whenever an application crashes because it is possible to get it to display this information in the Notification Center.
