As @caesarome indicates, Go use for streaming (but not offline viewing of downloads made at home) within Europe was enabled by EU portability of online content services regulation which ceased to apply to UK Sky subscribers on 'Brexit Day' (01/01/21).  Sky subscribers with an address in Eire retain those rights (but not if traveling to the UK) : there have been a few posts in this forum which seem to indicate that sometimes Sky servers struggle to differentiate Irish from British subscriptions.

Unless you are a Sky Ireland customer then you can not use Sky Go on Europe since Brexit.
