As a Sky Ireland customer you should e able to access Sky Go in Spain but as always you will not know for sure if it will work until you arrive in the country.

Sky Go still works in Spain and any other EU country for Irish customers, but not for UK customers.

Yes, with a Sky subscription in an EU country the EU portability rights apply.  Note previous posts indicate that Go sometimes misidentifies residency though.
