You can do this from the MySky section of the website as long as you are not locked into a long term contract. Or it may perhaps be easier to just ring Sky and they can make the changes to your subscription.

If you have a minimum term discount on Sky Sports it is unlikely to let you remove it via the My Sky section of the website or the app, it should do if you are outside any minimum term agreement for the package.
If you can't remove it onine you will need to phone Sky, however if you have a minimum term contract that covers Sky Sports they may look to charge you an early termination fee to remove it.

If you haven't got a current Sky Mobile or Sky Talk this link should help:
(UK) https://www.sky.com/help/home Scroll down and click on ‘Need more help’ and it provides a 0333 number
(ROI) on the same link change the flag in the very bottom corner to the ROI flag to obtain an 0818 number.
Stay on the line and don’t hang up if prompted to. Apparently the quieter times to ring are just after 7am or about 9pm.

@a-sykes i'm not sure what you are trying to achieve with your numerous posts on a public forum, but it won't get Sky Sports cancelled for you. It would seem that stating that I must have a few years on you by referring to said character from Harry Enfield's show back in the day is deemed inappropriate in these modern times, ooooer 🤔
