On a slight tangent, I couldn't find an alternative way to select the sky sports + streams. Should they be available on the sky sports website and app? I could only find the games on the linear channels, ie the liverpool and spurs games.

Apparently they were on the Sky Sports app (mobile) if you login.
I still find it bizarre how the full complement of sports isn't available on Sky Go, which is a much better interface in my opinion.

Sky Help team can't even have the courtesy to respond to a private DM on X, so I highly doubt they have issued any refunds.
Whilst BT/EE were more expensive as a whole package for Broadband/TV, there was never any problem or quality issues when streaming TV over IP. Certainly not the Sky of old that I remember and having some regrets switching now.
