Trying to set up stream. Everything was going well, but we got to the 'you're connected' screen after the software update, and then the screen seemed to be stuck, the remote wasn't working, and tried to reconnect it, but nothing seemed to work

One thing to try is to get the remote really close to the sky puck as it works from infra red until the setup ends
failing that I can escalate your post to the online sky community team .... although as it's Xmas it may be worth running through the troubleshooting with sky over the phone.
