Hi,
If I cancel my Sky Ultimate TV Subscription and keep the Sky Glass with a Sky Account, can I use the Netflix app on the TV and pay for the subscription seperately (or through Sky Billing), or will the app no longer work at all as Netflix is bundled with the TV package only?

Your TV will loose access to the TV guide but apps will continue to work. See: https://www.sky.com/help/articles/sky-glass-without-a-subscription
In terms of netflix billing, this will revert back to netflix once your subscription is cancelled, it's not possible to keep billing via Sky for netflix on its own. Once your subscription is cancelled, netflix should revert to the card stored on the account or if there isn't one will pause your subscription until one is added.
