Woth my previous tv, I list selected "source" on the remote, and then chose the hdmi port number that the ps5 was connected to the tv, by.
I have connected the ps5 to the sky glass tv via a hdmi cable and turned both on but I can't find an option to find the hdmi port it is connected to.

Try rebooting your Glass TV. Turn it off at the wall for a minute then power it back on and see if the HDMI inputs are accessible.

Should be under Home - Apps and inputs
Some Playstation users have had more sucess with an HDMI 2.1 ('8K') cable, but don't pay more than £10 for one if you want to try this.

Certified 2.1 cables may cost as much as £12😉
