The default router for FTTP should be the 2023 Max Hub, but if Sky has supply issues then it would be the 2019 Broadband Hub.

Re: Sky full fibre 75

Is full fibre 75 a thing as the options online show from 100 up to 500. I have the black router which I got earlier this year. Would I get another one or still use the same

Yes: wholesale FTTP goes down to a 40Mbs version.

The upright black Hub (SR203) is compatible with FTTP and Sky Talk Internet Calls.  Sky may choose to swap it for a Max Hub, mostly so they can try to sell you the WiFi Max subscription supplement.

The router is presumably currently using a copper 'phone' circuit for broadband data: that needs to be changed to an fibre-optic connection with an Optical Network Terminal.
