One of the method that I haven't tried is to disconnect all of my Hikvision devices apart from the base station and the gate camera.
Then from the devices list it should minimise the correct device that I should be selecting (as you can't view the IP/Mac) as opposed to stepping through a complete guessing game.

@thrusercat I would suggest your idea of temproary disconnecting the devices you are not trying to Port Forward and then that leaves those that you want to forward, although dont rely on the IP addresses, I have found out that Sky are not updating their ARP tables regualry, if at all, these map MAC to IP addresses, the MAC is correct and you can view them using the Devices button in the app, along with their name in the devices list, this should also show what IP they are on, but wouldnt trust it.
Having had a replacement Max router , the settings copied themselves over to the replacement , so dont rely on them changing if you have replacement or even hard booted the current router.
As for testing over the web using siltes like Canyouseeme.org or https://www.yougetsignal.com/tools/open-ports/, these rely on your device 'listening' on the specific port, if the Sky app port forwarding has opened the wrong port then these sites show as closed, when you get the right port open on the router then it WORKS 🙂
