That's not really correct: 500Mbs can only come from FTTP, and if there isn't already an optical connection all the way inside the property with a live ONT on the Openreach data network then the service cannot be delivered until that's all installed, which isn't a trivial task.
Putting the address into the BT Wholesale Availability Checker should indicate which provisioning type is applicable.

Are you upgrading the broadband with sky, or moving from another ISP, If you did this all through
sky, then you would not have been left without internet. If you cancelled your old supplier yourself,
then it is best to leave an overlap with new working befor cancelling the old.

Did you check before placing the order that full fibre is available in your area , we're you with sky broadband before? If so did you run a service check with the my sky app, after testing my Internet speed on that it told me full fibre is available in my area, gave me 3 options , 145mps, 500mps, and 900mps with sky full fibre
