@joannejay the most common cause of latency issues on gaming is a poor wifi connection between the console and your router causing packet loss which is why it is always better to us an Ethernet cable where ever possible. Where that is impractical the next best solution is usually powerline networking adapters that uses your home's mains wiring to carry the data. Improving wifi signal can help but a lot depends on the layout of your home, how it is built and the level of interference so can be a bit random.
Although latency issues can be caused by the routing to the server these are far rarer and effectively not something thst can be cured. Sky's network is pretty fast overall but latency can be introduced in the Openreach connection to your home but again is effectively something you havecto live with.
